For the Chili:
- 1 pound ground beef substitute
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can kidney beans, rinsed and drained
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can diced tomatoes, undrained
- 1 (8 ounce) can tomato sauce
- 1 packet chili seasoning
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
For the Casserole:
- 1 (30 ounce) bag frozen tater tots
- 2 cups shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions, for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
- In a large skillet over medium-high heat, brown the ground beef substitute. Drain off any excess grease.
- Add the chopped onion and green bell pepper to the skillet and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
- Stir in the kidney beans, black beans, diced tomatoes (undrained), tomato sauce, chili seasoning, cumin, smoked paprika, salt, and pepper. Bring to a simmer and cook for 15-20 minutes, stirring occasionally, to allow the flavors to meld.
- Spread the chili evenly over the bottom of the prepared baking dish.
- Sprinkle 1 cup of the shredded cheddar cheese over the chili.
- Arrange the frozen tater tots in a single layer over the cheese.
- Bake in the preheated oven for 25-30 minutes, or until the tater tots are golden brown and heated through.
- Remove from the oven and sprinkle the remaining 1 cup of cheddar cheese over the tater tots. Return to the oven for a few minutes until the cheese is melted and bubbly.
- Let the casserole cool for a few minutes before serving. Garnish with sour cream and chopped green onions, if desired.
