For the Chili:

  • 1 pound ground beef substitute
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 (8 ounce) can tomato sauce
  • 1 packet chili seasoning
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste

For the Casserole:

  • 1 (30 ounce) bag frozen tater tots
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions, for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. In a large skillet over medium-high heat, brown the ground beef substitute. Drain off any excess grease.
  3. Add the chopped onion and green bell pepper to the skillet and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  4. Stir in the kidney beans, black beans, diced tomatoes (undrained), tomato sauce, chili seasoning, cumin, smoked paprika, salt, and pepper. Bring to a simmer and cook for 15-20 minutes, stirring occasionally, to allow the flavors to meld.
  5. Spread the chili evenly over the bottom of the prepared baking dish.
  6. Sprinkle 1 cup of the shredded cheddar cheese over the chili.
  7. Arrange the frozen tater tots in a single layer over the cheese.
  8. Bake in the preheated oven for 25-30 minutes, or until the tater tots are golden brown and heated through.
  9. Remove from the oven and sprinkle the remaining 1 cup of cheddar cheese over the tater tots. Return to the oven for a few minutes until the cheese is melted and bubbly.
  10. Let the casserole cool for a few minutes before serving. Garnish with sour cream and chopped green onions, if desired.
