Ingredients

  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup vanilla or mint-flavored protein powder
  • 2 tablespoons maple syrup or honey
  • 1/2 teaspoon peppermint extract
  • 23 tablespoons almond milk
  • 12 drops green food coloring (optional)
  • 1 cup dark chocolate chips (or chopped dark chocolate)
  • 1 teaspoon coconut oil (optional)
  • Crushed chocolate or mint chocolate chips (optional, for garnish)

Instructions

  1. Combine soaked cashews, coconut, protein powder, maple syrup, and peppermint extract in a food processor.
  2. Blend until smooth, adding almond milk gradually for a dough-like consistency.
  3. Blend in green food coloring if desired.
  4. Roll into 1-tablespoon balls and place on a parchment-lined baking sheet.
  5. Freeze for 15-20 minutes.
  6. Melt chocolate chips and coconut oil (if using).
  7. Dip each mint ball into the melted chocolate.
  8. Sprinkle with crushed chocolate/mint chips (optional).
  9. Refrigerate for 15-30 minutes until firm.
