- 1–2 drops green food coloring (optional)
- 1 cup dark chocolate chips (or chopped dark chocolate)
- 1 teaspoon coconut oil (optional)
- Crushed chocolate or mint chocolate chips (optional, for garnish)
Instructions
- Combine soaked cashews, coconut, protein powder, maple syrup, and peppermint extract in a food processor.
- Blend until smooth, adding almond milk gradually for a dough-like consistency.
- Blend in green food coloring if desired.
- Roll into 1-tablespoon balls and place on a parchment-lined baking sheet.
- Freeze for 15-20 minutes.
- Melt chocolate chips and coconut oil (if using).
- Dip each mint ball into the melted chocolate.
- Sprinkle with crushed chocolate/mint chips (optional).
- Refrigerate for 15-30 minutes until firm.
