- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- ½ teaspoon peppermint extract
- ¼ cup cocoa powder
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream butter and sugar until light and fluffy.
- Add the egg, vanilla extract, and peppermint extract to the butter mixture and beat until well combined.
- Gradually mix in the dry ingredients until the dough just comes together.
- Divide the dough into two equal parts. Add cocoa powder to one half and mix until combined.
- Roll each dough portion into a ¼-inch-thick rectangle. Stack the vanilla dough on top of the chocolate dough.
- Roll the stacked dough into a tight log and wrap it in parchment or plastic wrap. Chill for 1 hour.
- Slice the chilled dough into ¼-inch rounds and place on prepared baking sheets.
- Bake for 10-12 minutes, or until edges are set. Cool on a wire rack.
Notes
- Chill dough thoroughly for cleaner, more defined swirls.
- Add crushed candy canes on top before baking for extra holiday flair.
- Dough logs can be frozen for up to 3 months; slice and bake directly from the freezer.
