Easy Churro Saltine Toffee – a sweet, salty, crunchy treat ready in minutes!

- 1 cup (2 sticks) unsalted butter
- 1 cup granulated sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 40 saltine crackers
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper. Arrange saltine crackers in a single layer.
- In a saucepan, melt butter. Add sugar and salt. Bring to a boil, stirring until sugar dissolves. Cook until golden brown, about 5-7 minutes. Remove from heat and stir in vanilla extract.
- Pour toffee over crackers, spreading evenly.
- Bake for 5-7 minutes, or until toffee is bubbly.
- Combine sugar and cinnamon. Sprinkle over hot toffee.
- Let cool completely, about 1-2 hours. Break into pieces and serve.
