  • 1 1/2 cups all-purpose flour (180g)
  • 1 teaspoon baking powder (5g)
  • 1/4 teaspoon salt (1.5g)
  • 1/4 cup (1/2 stick) unsalted butter, melted (57g)
  • 1/4 cup packed light brown sugar (50g)
  • 2 teaspoons ground cinnamon (4g)
  • 4 ounces cream cheese, softened (113g)
  • 1/4 cup (1/2 stick) unsalted butter, softened (57g)
  • 1 1/2 cups powdered sugar (180g)
  • 1/2 teaspoon vanilla extract (2.5ml)
  • 23 tablespoons milk (30-45ml)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Press half of the dough into the prepared baking pan in an even layer.
  7. In a small bowl, combine the melted butter, brown sugar, and cinnamon for the swirl. Mix well.
  8. Drop spoonfuls of the cinnamon mixture over the dough layer in the pan. Use a knife or toothpick to swirl the cinnamon mixture into the dough.
  9. Crumble the remaining dough over the cinnamon swirl layer.
  10. Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with moist crumbs.
  11. Let the bars cool completely in the pan before frosting.
  12. For the frosting, in a large bowl, beat together the softened cream cheese and butter until smooth and creamy.
  13. Gradually add the powdered sugar and vanilla extract, mixing until smooth.
  14. Add milk, one tablespoon at a time, until the frosting reaches your desired consistency.
  15. Spread the frosting evenly over the cooled bars.
  16. Cut into squares and serve.
