Blondies Base

  • 1 cup (225g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 1 cup (220g) light brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups (250g) all-purpose flour (or gluten-free flour blend)
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

Cinnamon Swirl

  • 1 tablespoon unsalted butter, melted
  • 2 tablespoons ground cinnamon
  • ½ cup (100g) light brown sugar

Instructions

  • Preheat & Prep: Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish or line with parchment paper.
  • Mix the Base: In a bowl, mix melted butter, granulated sugar, and brown sugar until smooth. Beat in eggs one at a time, then add vanilla.
  • Combine Dry Ingredients: Stir in flour, baking powder, and salt until fully incorporated.
  • Make the Cinnamon Swirl: Mix melted butter, cinnamon, and brown sugar in a small bowl.
  • Layer & Swirl: Spread half of the batter into the pan, drop half of the cinnamon swirl, and gently swirl with a knife. Repeat with the remaining batter and cinnamon swirl.
  • Bake: Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  • Cool & Serve: Let cool for 10 minutes before slicing. Enjoy warm or let cool completely for a firmer texture!

  • Dairy-Free? Swap butter with coconut oil or a plant-based alternative.
  • Make It Vegan: Replace eggs with flax eggs (1 tbsp flaxseed + 2.5 tbsp water per egg).
