- 1 cup pumpkin puree
- 1/2 cup vegetable oil
- 2 large eggs
- 1 1/2 cups granulated sugar

- Streusel Topping: 1/4 cup all-purpose flour, 1/4 cup brown sugar, 1/4 cup rolled oats, 1/4 cup chopped pecans, 2 tablespoons cold butter (cubed), 1/2 teaspoon ground cinnamon
- Maple Glaze: 1 cup powdered sugar, 2 tablespoons pure maple syrup, 1-2 tablespoons milk
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- Whisk together flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger in a medium bowl.
- In a large bowl, combine pumpkin puree, vegetable oil, eggs, sugar, and water until smooth.
- Gradually add dry ingredients to wet ingredients, stirring until just combined.
- Pour batter into prepared loaf pan.
- For streusel topping, combine flour, brown sugar, oats, pecans, butter, and cinnamon until crumbly. Sprinkle over the batter.
- Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in pan for 15 minutes, then transfer to a wire rack to cool completely.
- For the glaze, whisk together powdered sugar, maple syrup, and milk. Drizzle over cooled bread before serving.
