  • 1 cup pumpkin puree

  • 2 large eggs
  • 1 1/2 cups granulated sugar
  • 1/4 cup water
  • Streusel Topping: 1/4 cup all-purpose flour, 1/4 cup brown sugar, 1/4 cup rolled oats, 1/4 cup chopped pecans, 2 tablespoons cold butter (cubed), 1/2 teaspoon ground cinnamon
  • Maple Glaze: 1 cup powdered sugar, 2 tablespoons pure maple syrup, 1-2 tablespoons milk

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. Whisk together flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger in a medium bowl.
  3. In a large bowl, combine pumpkin puree, vegetable oil, eggs, sugar, and water until smooth.
  4. Gradually add dry ingredients to wet ingredients, stirring until just combined.
  5. Pour batter into prepared loaf pan.
  6. For streusel topping, combine flour, brown sugar, oats, pecans, butter, and cinnamon until crumbly. Sprinkle over the batter.
  7. Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in pan for 15 minutes, then transfer to a wire rack to cool completely.
  9. For the glaze, whisk together powdered sugar, maple syrup, and milk. Drizzle over cooled bread before serving.
