- 1 pound cremini mushrooms, sliced
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 jalapeño pepper, seeded and minced (optional)
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/4 teaspoon cayenne pepper (optional)
- 1/2 cup vegetable broth
- 2 tablespoons chopped fresh parsley
- Salt and black pepper to taste
- 4 burger buns, toasted
- Optional toppings: lettuce, tomato, avocado slices, mayonnaise
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add sliced mushrooms, chopped onion, and chopped red bell pepper to the skillet. Cook, stirring occasionally, until the mushrooms are browned and the vegetables are softened, about 8-10 minutes.
- Add minced garlic and jalapeño (if using) to the skillet and cook for another minute until fragrant.
- Stir in smoked paprika, cumin, and cayenne pepper (if using). Season with salt and black pepper to taste.
- Pour in vegetable broth and bring to a simmer. Cook for 5 minutes, allowing the sauce to reduce slightly.
- Stir in chopped fresh parsley.
- Spoon the cowboy mushroom mixture onto toasted burger buns.
- Add your favorite toppings, such as lettuce, tomato, avocado slices, or mayonnaise.
- Serve immediately and enjoy!
