  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 jalapeño pepper, seeded and minced (optional)
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 cup vegetable broth
  • 2 tablespoons chopped fresh parsley
  • Salt and black pepper to taste
  • 4 burger buns, toasted
  • Optional toppings: lettuce, tomato, avocado slices, mayonnaise

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add sliced mushrooms, chopped onion, and chopped red bell pepper to the skillet. Cook, stirring occasionally, until the mushrooms are browned and the vegetables are softened, about 8-10 minutes.
  3. Add minced garlic and jalapeño (if using) to the skillet and cook for another minute until fragrant.
  4. Stir in smoked paprika, cumin, and cayenne pepper (if using). Season with salt and black pepper to taste.
  5. Pour in vegetable broth and bring to a simmer. Cook for 5 minutes, allowing the sauce to reduce slightly.
  6. Stir in chopped fresh parsley.
  7. Spoon the cowboy mushroom mixture onto toasted burger buns.
  8. Add your favorite toppings, such as lettuce, tomato, avocado slices, or mayonnaise.
