  • Yield: 6 servings 1x
  • Diet: Vegetarian

Description

A vibrant and refreshing coleslaw featuring crisp cabbage, sweet-tart apples, and chewy cranberries, all coated in a creamy, tangy dressing. Perfect for any meal!

Ingredients

Scale
  • 1/2 head green cabbage (about 4 cups shredded)
  • 2 medium apples (such as Granny Smith or Honeycrisp)
  • 1/2 cup dried cranberries
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Shred the cabbage finely using a knife or mandoline slicer. Place in a large mixing bowl.
  2. Core and dice the apples into small pieces. Add to the bowl with the cabbage.
  3. Add the dried cranberries to the bowl.
  4. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper until smooth.
  5. Pour the dressing over the cabbage, apples, and cranberries. Toss well to coat everything evenly.
  6. If using, stir in the chopped walnuts.
  7. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld. Serve chilled.

Notes

  • Chilling is Key: Don’t skip the 30-minute refrigeration step; it allows the flavors to truly meld and the cabbage to soften slightly for optimal taste and texture.
  • Adjust Sweetness: Taste the dressing before combining and adjust honey to your preferred level of sweetness.
