  • 3 pounds (1.4kg) beef roast
  • 1 onion (150g), chopped
  • 2 cloves garlic (10g), minced
  • 1 cup (240ml) beef broth
  • 2 tablespoons (30ml) balsamic vinegar
  • 1 tablespoon (15g) brown sugar
  • 1 teaspoon (5g) dried thyme

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix cranberries, olive oil, salt, and pepper.
  3. Rub the beef roast with the cranberry mixture, coating evenly.
  4. Place the roast in a roasting pan, add chopped onion and minced garlic around it.
  5. Pour beef broth and balsamic vinegar into the pan.
  6. Sprinkle brown sugar and dried thyme over the roast.
  7. Cover with foil and roast for 2 hours, or until internal temperature reaches 145°F (63°C) for medium-rare.
  8. Remove from oven, let rest for 10 minutes before slicing.
  9. Serve with pan juices as a sauce.

  • Don’t Skip Resting: Always rest your roast for at least 10 minutes after cooking. This allows the juices to redistribute, ensuring a tender, succulent slice every time.
  • Internal Temperature: For perfect medium-rare, aim for 145°F (63°C). For medium, target 160°F (71°C), and for well-done, 170°F (77°C). Remember, the temperature will rise slightly after it’s removed from the oven.
