- 3 pounds (1.4kg) beef roast
- 1 onion (150g), chopped
- 2 cloves garlic (10g), minced
- 1 cup (240ml) beef broth
- 2 tablespoons (30ml) balsamic vinegar
- 1 tablespoon (15g) brown sugar
- 1 teaspoon (5g) dried thyme
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix cranberries, olive oil, salt, and pepper.
- Rub the beef roast with the cranberry mixture, coating evenly.
- Place the roast in a roasting pan, add chopped onion and minced garlic around it.
- Pour beef broth and balsamic vinegar into the pan.
- Sprinkle brown sugar and dried thyme over the roast.
- Cover with foil and roast for 2 hours, or until internal temperature reaches 145°F (63°C) for medium-rare.
- Remove from oven, let rest for 10 minutes before slicing.
- Serve with pan juices as a sauce.

- Internal Temperature: For perfect medium-rare, aim for 145°F (63°C). For medium, target 160°F (71°C), and for well-done, 170°F (77°C). Remember, the temperature will rise slightly after it’s removed from the oven.
