  • 1 pound Italian-style chicken sausage, casings removed
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried sage
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook the butternut squash gnocchi according to package directions. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium heat. Add the chicken sausage and cook, breaking it apart with a spoon, until browned and cooked through. Remove the sausage from the skillet and set aside.
  3. Add the chopped onion to the skillet and cook until softened, about 5 minutes. Add the minced garlic, dried sage, and red pepper flakes (if using) and cook for another minute until fragrant.
  4. Pour the chicken broth into the skillet, scraping up any browned bits from the bottom. Bring to a simmer and let it reduce slightly, about 3 minutes. Stir in the heavy cream and Parmesan cheese. Season with salt and black pepper to taste.
  5. Add the cooked gnocchi and browned sausage back into the skillet with the sauce. Toss to coat everything evenly.
  6. Serve the creamy butternut squash gnocchi immediately, garnished with fresh parsley and extra Parmesan cheese, if desired.
