- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 4 slices of turkey breast
- 4 slices of mozzarella cheese
- 1/4 cup all-purpose flour
- 1 large egg, beaten
- 1/2 cup breadcrumbs
- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 1/2 cups chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- 1 tablespoon chopped fresh parsley
Instructions
- Preheat oven to 375°F (190°C).
- Place each chicken breast between two sheets of plastic wrap and pound to 1/4-inch thickness. Season with salt and pepper.
- Place a slice of turkey breast and a slice of mozzarella cheese on top of each chicken breast. Fold the chicken breast in half, or roll it up, to enclose the filling. Secure with toothpicks if needed.
- Place flour, beaten egg, and breadcrumbs in separate shallow dishes. Dredge each chicken breast in flour, then dip in egg, and finally coat with breadcrumbs, pressing gently to adhere.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Add the breaded chicken breasts and sear for 2-3 minutes per side, until golden brown.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly. Remove toothpicks before serving.
- While the chicken is baking, melt butter in a saucepan over medium heat. Whisk in flour and cook for 1 minute, until smooth.
- Gradually whisk in chicken broth until smooth. Bring to a simmer, then reduce heat and simmer for 5 minutes, or until the sauce has thickened slightly.
- Stir in heavy cream, Parmesan cheese, and garlic powder. Season with salt and pepper to taste. Cook for 2-3 minutes more, until the cheese is melted and the sauce is smooth and creamy.
- Remove the baked chicken from the oven and let it rest for a few minutes. Spoon the creamy sauce over the chicken. Garnish with chopped fresh parsley.
