Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 4 slices of turkey breast
  • 4 slices of mozzarella cheese
  • 1/4 cup all-purpose flour
  • 1 large egg, beaten
  • 1/2 cup breadcrumbs
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Place each chicken breast between two sheets of plastic wrap and pound to 1/4-inch thickness. Season with salt and pepper.
  3. Place a slice of turkey breast and a slice of mozzarella cheese on top of each chicken breast. Fold the chicken breast in half, or roll it up, to enclose the filling. Secure with toothpicks if needed.
  4. Place flour, beaten egg, and breadcrumbs in separate shallow dishes. Dredge each chicken breast in flour, then dip in egg, and finally coat with breadcrumbs, pressing gently to adhere.
  5. Heat olive oil in a large oven-safe skillet over medium-high heat. Add the breaded chicken breasts and sear for 2-3 minutes per side, until golden brown.
  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly. Remove toothpicks before serving.
  7. While the chicken is baking, melt butter in a saucepan over medium heat. Whisk in flour and cook for 1 minute, until smooth.
  8. Gradually whisk in chicken broth until smooth. Bring to a simmer, then reduce heat and simmer for 5 minutes, or until the sauce has thickened slightly.
  9. Stir in heavy cream, Parmesan cheese, and garlic powder. Season with salt and pepper to taste. Cook for 2-3 minutes more, until the cheese is melted and the sauce is smooth and creamy.
  10. Remove the baked chicken from the oven and let it rest for a few minutes. Spoon the creamy sauce over the chicken. Garnish with chopped fresh parsley.
