- 1 package (500g) potato gnocchi
- 1 cup (240ml) heavy cream
- 2 cups (60g) fresh spinach leaves
- 1/2 cup (75g) crumbled feta cheese
- 2 tablespoons (30g) unsalted butter
- 2 cloves garlic, minced
- 1/4 cup (25g) grated Parmesan cheese
- 1/4 teaspoon (1g) black pepper
- 1/4 teaspoon (1g) salt
Instructions
- Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the surface, about 2-3 minutes. Drain and set aside.
- In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Pour in the heavy cream and bring to a simmer. Cook for 2-3 minutes, stirring occasionally, until slightly thickened.
- Add the cooked gnocchi to the skillet and toss to coat in the creamy sauce.
- Stir in the fresh spinach leaves and cook for 1-2 minutes until wilted.
- Remove from heat and gently fold in the crumbled feta cheese and grated Parmesan cheese.
- Season with salt and black pepper to taste. Serve immediately.
