  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 cup heavy cream
  • 4 oz cream cheese, softened
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese
  • 1 cup broccoli florets
  • 1/2 cup chopped celery
  • 1/4 cup chopped green bell pepper
  • 2 tbsp chopped fresh parsley

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium-high heat. Add chicken pieces and season with garlic powder, onion powder, salt, and pepper. Cook until chicken is cooked through and lightly browned, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. In the same skillet, reduce heat to medium. Add heavy cream and cream cheese. Stir until cream cheese is melted and the sauce is smooth.
  4. Stir in chicken broth and cheddar cheese until the cheese is melted and the sauce is well combined.
  5. Add broccoli florets, celery, and green bell pepper to the sauce. Cook for 3-5 minutes, or until vegetables are slightly tender.
  6. Stir in the cooked chicken and parsley.
  7. Pour the chicken and vegetable mixture into a 9×13 inch baking dish.
  8. Bake in preheated oven for 20-25 minutes, or until bubbly and lightly browned.
  9. Let stand for 5-10 minutes before serving.
