- 2 cloves garlic, minced
- 1 cup long-grain rice
- 2 cups chicken broth
- 4 oz can diced green chilies
- 4 oz cream cheese, softened
- 1 cup shredded Monterey Jack cheese
- 1/2 cup milk
- 1/4 cup chopped cilantro
Instructions
- Prepare the Steak: In a bowl, combine steak strips with olive oil, cumin, chili powder, garlic powder, salt, and pepper. Mix well to coat.
- Cook the Steak: Heat a large skillet over medium-high heat. Add the steak strips and cook for 3-5 minutes, or until browned and cooked through. Remove from skillet and set aside.
- Start the Rice: In the same skillet, add olive oil and sauté the chopped onion until softened, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.
- Cook the Rice: Add the rice to the skillet and cook for 1 minute, stirring constantly. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes, or until the rice is cooked and the liquid is absorbed.
- Make the Queso: Stir in the diced green chilies, cream cheese, Monterey Jack cheese, and milk. Cook over low heat, stirring constantly, until the cheeses are melted and the mixture is smooth and creamy.
- Combine: Add the cooked steak strips to the queso rice and stir to combine.
- Garnish: Garnish with chopped cilantro before serving.
