Ingredients
1 tablespoon (15ml) olive oil
1 small onion, chopped (about 1 cup / 120g)
2 cloves garlic, minced (about 1 teaspoon / 5g)
28 ounces (794g) crushed tomatoes
1 cup (240ml) vegetable broth
1/2 cup (120ml) heavy cream
1 teaspoon sugar
1/2 teaspoon dried basil
Salt and pepper to taste
Optional: Fresh basil for garnish
Instructions
Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
Add the minced garlic and cook for another minute until fragrant.
Pour in the crushed tomatoes and vegetable broth. Stir in the sugar and dried basil.
Bring the mixture to a simmer and cook for 15-20 minutes, allowing the flavors to meld together.
Remove the pot from the heat and carefully use an immersion blender to blend the soup until smooth. Alternatively, you can transfer the soup to a regular blender in batches, ensuring to vent the lid.
Return the pot to low heat and stir in the heavy cream. Season with salt and pepper to taste.
Heat through gently, but do not boil after adding the cream to prevent curdling.
Serve hot, garnished with fresh basil if desired.
Notes
For best results, use good quality crushed tomatoes.
If freezing, do so before adding the heavy cream. Stir in cream upon reheating.
Adjust sugar and seasoning to your personal preference.
