Ingredients

  • 6 medium potatoes, peeled and cubed
  • 1 medium onion, chopped
  • 4 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried thyme
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions, for garnish
  • 4 ounces diced turkey, cooked

Instructions

  1. Place the cubed potatoes and chopped onion in a crock pot.
  2. Pour the chicken broth over the potatoes and onion. Season with salt, pepper, garlic powder, and dried thyme.
  3. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the potatoes are tender.
  4. Once the potatoes are cooked, use an immersion blender to blend the soup until smooth. Alternatively, you can carefully transfer the soup to a regular blender in batches.
  5. Stir in the softened cream cheese, shredded cheddar cheese, and sour cream until well combined and melted.
  6. Add the diced cooked turkey.
  7. Garnish with chopped green onions before serving.
