			- 6 medium potatoes, peeled and cubed
- 1 medium onion, chopped
- 4 cups chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/4 teaspoon dried thyme
- 1 cup cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions, for garnish
- 4 ounces diced turkey, cooked
Instructions
- Place the cubed potatoes and chopped onion in a crock pot.
- Pour the chicken broth over the potatoes and onion. Season with salt, pepper, garlic powder, and dried thyme.
- Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the potatoes are tender.
- Once the potatoes are cooked, use an immersion blender to blend the soup until smooth. Alternatively, you can carefully transfer the soup to a regular blender in batches.
- Stir in the softened cream cheese, shredded cheddar cheese, and sour cream until well combined and melted.
- Add the diced cooked turkey.
- Garnish with chopped green onions before serving.
