Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces cream cheese, softened
  • 1/2 cup heavy cream
  • 1 cup grated Parmesan cheese, plus more for garnish
  • Fresh parsley, chopped, for garnish

Instructions

  1. Place chicken breasts, chopped onion, minced garlic, chicken broth, diced tomatoes, dried basil, dried oregano, salt, and pepper in a crock pot.
  2. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through and shreds easily.
  3. Remove chicken from the crock pot and shred with two forks. Return the shredded chicken to the crock pot.
  4. Add softened cream cheese and heavy cream to the crock pot. Stir until the cream cheese is melted and the soup is creamy.
  5. Stir in Parmesan cheese until melted and combined.
  6. Serve hot, garnished with extra Parmesan cheese and fresh parsley.
