- 2 large cucumbers, peeled and diced
- 1 red onion, thinly sliced
- 8 ounces feta cheese, crumbled
- 1/2 cup Kalamata olives, pitted and halved
- 1/4 cup fresh mint, chopped
- 1/4 cup fresh parsley, chopped
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- In a large bowl, combine the diced cucumbers, sliced red onion, crumbled feta cheese, and halved Kalamata olives.
- Add the chopped fresh mint and parsley to the bowl.
- In a small bowl, whisk together the olive oil, lemon juice, minced garlic, and dried oregano.
- Pour the dressing over the cucumber mixture and toss gently to combine.
- Season with salt and pepper to taste.
- Refrigerate for at least 30 minutes to allow the flavors to meld. This step is optional but recommended.
