Ingredients

  • 400g / 1 can chickpeas, drained and rinsed
  • 120g / 1/2 cup mayonnaise (or plant-based alternative)
  • 15ml / 1 tablespoon curry powder
  • 60g / 1/4 cup raisins
  • 60g / 1/4 cup slivered almonds, toasted
  • 1/4 red onion, finely chopped
  • 1 stalk celery, finely chopped
  • 15ml / 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 15g / 1/4 cup fresh cilantro, chopped (optional)

Instructions

  1. Drain and rinse the chickpeas. Pat dry.
  2. In a large bowl, combine chickpeas, mayonnaise, curry powder, raisins, almonds, red onion, and celery.
  3. Add lemon juice, salt, and pepper. Mix well.
  4. Cover and refrigerate for at least 30 minutes.
  5. Garnish with cilantro (optional) and serve.
