- 400g / 1 can chickpeas, drained and rinsed
- 120g / 1/2 cup mayonnaise (or plant-based alternative)
- 15ml / 1 tablespoon curry powder
- 60g / 1/4 cup raisins
- 60g / 1/4 cup slivered almonds, toasted
- 1/4 red onion, finely chopped
- 1 stalk celery, finely chopped
- 15ml / 1 tablespoon lemon juice
- Salt and pepper to taste
- 15g / 1/4 cup fresh cilantro, chopped (optional)
Instructions
- Drain and rinse the chickpeas. Pat dry.
- In a large bowl, combine chickpeas, mayonnaise, curry powder, raisins, almonds, red onion, and celery.
- Add lemon juice, salt, and pepper. Mix well.
- Cover and refrigerate for at least 30 minutes.
- Garnish with cilantro (optional) and serve.
