- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon oregano
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup chicken broth
- 1/4 cup cream cheese, softened
- 1/2 cup shredded cheddar cheese
- 16 corn tortillas
- Vegetable oil, for frying
Instructions
- In a large pot, cover chicken breasts with water. Bring to a boil, then simmer for 15-20 minutes, until cooked. Shred.
- Heat olive oil in a skillet. Add onion and cook until softened. Add garlic, chili powder, cumin, oregano, salt, and pepper. Cook for 1 minute.
- Add shredded chicken to the skillet. Pour in chicken broth and simmer for 5 minutes.
- Stir in cream cheese and cheddar cheese until melted. Remove from heat and let cool.
- Wrap tortillas in a damp paper towel and microwave for 30-60 seconds.
- Place filling onto each tortilla. Roll tightly and secure with a toothpick, if needed.
- Heat vegetable oil in a skillet. Fry taquitos, seam-side down, for 2-3 minutes per side, until golden brown and crispy.
- Drain taquitos on a paper towel-lined plate. Remove toothpicks and serve with desired toppings.
