Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch square baking pan.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
- Gently fold in the diced apples and cinnamon.
- Prepare the crumble topping: In a small bowl, combine the flour, brown sugar, and cinnamon. Cut in the cold, cubed butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Pour the cake batter into the prepared pan and spread evenly.
- Sprinkle the crumble topping evenly over the batter.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before cutting into squares and serving.
Notes
- Apple Variety: Honeycrisp and Granny Smith are recommended, but feel free to experiment with your favorites.
- Buttermilk Substitute: Mix 1/2 tablespoon of lemon juice or vinegar with 1/2 cup of milk.
