  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder

  • 1/4 teaspoon salt
  • 1/2 cup buttermilk
  • 2 cups peeled and diced apples (such as Honeycrisp or Granny Smith)
  • 1 teaspoon ground cinnamon
  • 1/2 cup all-purpose flour (for crumble)
  • 1/4 cup packed brown sugar (for crumble)
  • 1/4 cup unsalted butter, cold and cubed (for crumble)
  • 1/2 teaspoon ground cinnamon (for crumble)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch square baking pan.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
  6. Gently fold in the diced apples and cinnamon.
  7. Prepare the crumble topping: In a small bowl, combine the flour, brown sugar, and cinnamon. Cut in the cold, cubed butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  8. Pour the cake batter into the prepared pan and spread evenly.
  9. Sprinkle the crumble topping evenly over the batter.
  10. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  11. Let the cake cool in the pan for 10 minutes before cutting into squares and serving.

Notes

  • Apple Variety: Honeycrisp and Granny Smith are recommended, but feel free to experiment with your favorites.
  • Buttermilk Substitute: Mix 1/2 tablespoon of lemon juice or vinegar with 1/2 cup of milk.
