- 1 1/2 cups pecan halves
Instructions
- Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
- In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, and salt.
- In a separate bowl, whisk together the milk, vegetable oil, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- In a medium bowl, prepare the pecan pie filling. Stir together the melted butter, brown sugar, maple syrup, egg, vanilla extract, and salt until smooth.
- Stir in the pecan halves.
- Fill each muffin liner about halfway with the muffin batter.
- Spoon about 1-2 tablespoons of the pecan pie filling over the muffin batter in each liner.
- Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.

- Storage: Store cooled muffins in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 5 days.
- Reheating: Warm muffins in a preheated oven at 350°F (175°C) for 5-10 minutes or microwave for 15-30 seconds.
