  • 2 medium tomatoes, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the diced cucumbers, diced tomatoes, and thinly sliced red onion.
  2. Add the chopped fresh parsley and fresh mint to the bowl.
  3. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper.
  4. Pour the dressing over the cucumber and tomato mixture.
  5. Gently toss everything together until well combined.
  6. Taste and adjust seasoning as needed.
  7. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together (optional).
