Ingredients

- 2 medium cucumbers, peeled and diced
- 2 medium tomatoes, diced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- In a large bowl, combine the diced cucumbers, diced tomatoes, and thinly sliced red onion.
- Add the chopped fresh parsley and fresh mint to the bowl.
- In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper.
- Pour the dressing over the cucumber and tomato mixture.
- Gently toss everything together until well combined.
- Taste and adjust seasoning as needed.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together (optional).
- Before serving, give the salad another gentle toss.
- Serve chilled and enjoy!
