For the Burritos:
- 4 large flour tortillas
- 1 cup cooked rice
- 1 cup black beans, rinsed and drained
- 1 cup shredded lettuce
- 1/2 cup shredded cheddar cheese
- 1 avocado, sliced
Instructions
- Prepare the Chicken: In a bowl, whisk together olive oil, chipotle pepper sauce, smoked paprika, garlic powder, onion powder, cumin, salt, and pepper. Marinate the chicken breasts in the mixture for at least 30 minutes, or up to 4 hours in the refrigerator.
- Grill the Chicken: Preheat your grill to medium-high heat. Grill the chicken breasts for 6-8 minutes per side, or until cooked through and the internal temperature reaches 165°F (74°C). Let the chicken rest for 5 minutes, then dice or shred it.
- Make the Chipotle Ranch Dressing: In a bowl, whisk together mayonnaise, sour cream, buttermilk, chipotle pepper sauce, cilantro, minced garlic, lime juice, salt, and pepper. Adjust seasonings to taste. Refrigerate until ready to use.
- Assemble the Burritos: Warm the tortillas according to package instructions. Spread a generous amount of chipotle ranch dressing on each tortilla. Layer with cooked rice, black beans, shredded lettuce, shredded cheddar cheese, sliced avocado, and grilled chicken.
- Fold the Burritos: Fold in the sides of the tortilla, then fold up the bottom and roll tightly to create a burrito.
- Grill the Burritos (Optional): For a crispy exterior, grill the assembled burritos for 1-2 minutes per side, or until lightly golden brown.
