Easy to make cinnamon sugar blondies perfect for a quick dessert or snack.

- 1/2 cup (1 stick) unsalted butter, melted
- 1 cup granulated sugar
- 1/4 cup packed light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1 cup all-purpose flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
- In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until well combined.
- Beat in the egg and then stir in the vanilla and almond extracts.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- In a small bowl, combine the 2 tablespoons of granulated sugar and cinnamon for the topping.
- Pour the batter into the prepared baking pan and spread evenly.
- Sprinkle the cinnamon sugar mixture evenly over the top of the batter.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached.
- Let the blondies cool completely in the pan before cutting into squares.
Notes
- Tip: Use parchment paper for easy cleanup.
- Variation: Add 1/2 cup chocolate chips to the batter.
