Description

A light and refreshing salad featuring cucumbers, cherry tomatoes, mozzarella, and basil.


Ingredients

  • 2 large cucumbers, thinly sliced
  • 2 cups cherry tomatoes, halved
  • 8 oz fresh mozzarella balls (ciliegine)
  • 1/4 cup fresh basil leaves
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Wash and dry the cucumbers, then slice them into thin rounds.
  2. Cut the cherry tomatoes in half and place them in a large mixing bowl.
  3. Add the cucumber slices to the bowl with the tomatoes.
  4. Drain the fresh mozzarella balls and pat them dry, then add to the bowl.
  5. Tear the fresh basil leaves into smaller pieces and add them to the salad mixture.
  6. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and black pepper.
  7. Pour the dressing over the salad ingredients and gently toss until evenly coated.
  8. Let the salad sit for 5-10 minutes to allow the flavors to meld together.
  9. Serve immediately.
