Ingredients

- 2 large cucumbers, thinly sliced
- 2 cups cherry tomatoes, halved
- 8 oz fresh mozzarella balls (ciliegine)
- 1/4 cup fresh basil leaves
- 3 tablespoons extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Wash and dry the cucumbers, then slice them into thin rounds.
- Cut the cherry tomatoes in half and place them in a large mixing bowl.
- Add the cucumber slices to the bowl with the tomatoes.
- Drain the fresh mozzarella balls and pat them dry, then add to the bowl.
- Tear the fresh basil leaves into smaller pieces and add them to the salad mixture.
- In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and black pepper.
- Pour the dressing over the salad ingredients and gently toss until evenly coated.
- Let the salad sit for 5-10 minutes to allow the flavors to meld together.
- Serve immediately.
