  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1.5 lbs Yukon gold potatoes, cut into 1-inch pieces
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp dried Italian herbs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tablespoons vegetable broth
  • 2 tablespoons lemon juice

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss the potatoes with 2 tablespoons of olive oil, salt, pepper, and Italian herbs.
  3. Spread the potatoes in a single layer on a baking sheet.
  4. In the same bowl, toss the chicken with the remaining 2 tablespoons of olive oil, minced garlic, and vegetable broth.
  5. Nestle the chicken pieces among the potatoes on the baking sheet.
  6. Bake for 25-30 minutes, or until the chicken is cooked through and the potatoes are tender.
  7. Remove from oven and sprinkle evenly with Parmesan cheese.
  8. Drizzle the lemon juice over the chicken and potatoes.
  9. Let it rest for 5 minutes before serving.
