- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 1.5 lbs Yukon gold potatoes, cut into 1-inch pieces
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 tbsp dried Italian herbs
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tablespoons vegetable broth
- 2 tablespoons lemon juice
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss the potatoes with 2 tablespoons of olive oil, salt, pepper, and Italian herbs.
- Spread the potatoes in a single layer on a baking sheet.
- In the same bowl, toss the chicken with the remaining 2 tablespoons of olive oil, minced garlic, and vegetable broth.
- Nestle the chicken pieces among the potatoes on the baking sheet.
- Bake for 25-30 minutes, or until the chicken is cooked through and the potatoes are tender.
- Remove from oven and sprinkle evenly with Parmesan cheese.
- Drizzle the lemon juice over the chicken and potatoes.
- Let it rest for 5 minutes before serving.
