Ingredients

  • 900g / 2 pounds Potatoes
  • 1 Medium Onion, chopped
  • 2 Celery stalks, chopped
  • 240ml / 1 cup Vegetable Broth
  • 60ml / 1/4 cup Apple Cider Vinegar
  • 30ml / 2 tablespoons Dijon Mustard
  • 15ml / 1 tablespoon Sugar
  • 30ml / 2 tablespoons Fresh Parsley, chopped
  • Salt and Pepper to taste

Instructions

  • Step 1: Boil potatoes until tender, about 15 minutes.
  • Step 2: Whisk together broth, vinegar, mustard, sugar, salt, and pepper.
  • Step 3: Cut cooled potatoes into bite-sized pieces and combine with onion and celery.
  • Step 4: Pour dressing over potatoes and toss gently.
  • Step 5: Stir in parsley and let sit for 10 minutes before serving.
