Ingredients

- 900g / 2 pounds Potatoes
- 1 Medium Onion, chopped
- 2 Celery stalks, chopped
- 240ml / 1 cup Vegetable Broth
- 60ml / 1/4 cup Apple Cider Vinegar
- 30ml / 2 tablespoons Dijon Mustard
- 15ml / 1 tablespoon Sugar
- 30ml / 2 tablespoons Fresh Parsley, chopped
- Salt and Pepper to taste
Instructions
- Step 1: Boil potatoes until tender, about 15 minutes.
- Step 2: Whisk together broth, vinegar, mustard, sugar, salt, and pepper.
- Step 3: Cut cooled potatoes into bite-sized pieces and combine with onion and celery.
- Step 4: Pour dressing over potatoes and toss gently.
- Step 5: Stir in parsley and let sit for 10 minutes before serving.
