- 1 tablespoon olive oil
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 10 ounces fresh spinach, washed and chopped
- 1/2 cup fresh dill, chopped
- 1/4 cup fresh parsley, chopped
- 8 ounces feta cheese, crumbled
- 2 large eggs, lightly beaten
- 1/4 teaspoon ground nutmeg
- Salt and black pepper, to taste
- 12 sheets gluten-free phyllo pastry
- 1/2 cup melted butter or olive oil (for brushing)
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and cook until softened, about 5 minutes.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Add spinach in batches, cooking until wilted and most liquid has evaporated (5–7 minutes).
- Transfer mixture to a large bowl and let cool for 10 minutes.
- Once cooled, mix in dill, parsley, feta, eggs, nutmeg, salt, and pepper.
- Lay one sheet of gluten-free phyllo on a clean surface and brush with melted butter or olive oil.
- Place a second sheet on top, brush again, then repeat with a third sheet to form a sturdy base.
- Cut layered phyllo into 4 equal strips.
- Place about 2 tablespoons of filling at the bottom of each strip.
- Fold the bottom corner over the filling to form a triangle, then keep folding in a triangular pattern until the end.
- Brush tops with butter or oil and place on prepared baking sheet.
- Repeat with remaining phyllo and filling.
- Bake 20–25 minutes until golden brown and crispy.
- Cool for 5 minutes before serving.
Notes
- Gluten-Free: Ensure you use certified gluten-free phyllo pastry.
- Spinach: Frozen spinach can be used, but make sure to squeeze out all excess water.
