- 12 oz penne pasta
- 1 tbsp olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 2 cups vegetable broth
- 1/2 cup heavy cream
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes (optional)
- Salt and black pepper to taste
- 1/2 cup grated Parmesan cheese
- Fresh basil leaves for garnish
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and cook until softened, about 3-4 minutes.
- Add minced garlic and cook for another minute until fragrant.
- Pour in crushed tomatoes and vegetable broth, then stir to combine.
- Add dried basil, dried oregano, red pepper flakes (if using), salt, and black pepper. Stir well.
- Add the penne pasta to the pot, making sure it’s fully submerged in the liquid.
- Bring the mixture to a boil, then reduce heat to medium-low and simmer for 12-15 minutes, stirring occasionally, until pasta is al dente and most liquid is absorbed.
- Stir in heavy cream and Parmesan cheese until well combined and creamy.
- Cook for another 2-3 minutes until heated through.
- Remove from heat and let sit for 2 minutes to thicken slightly.
- Garnish with fresh basil leaves before serving.
