Ingredients

  • 12 oz penne pasta
  • 1 tbsp olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 2 cups vegetable broth
  • 1/2 cup heavy cream
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1/2 cup grated Parmesan cheese
  • Fresh basil leaves for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and cook until softened, about 3-4 minutes.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Pour in crushed tomatoes and vegetable broth, then stir to combine.
  4. Add dried basil, dried oregano, red pepper flakes (if using), salt, and black pepper. Stir well.
  5. Add the penne pasta to the pot, making sure it’s fully submerged in the liquid.
  6. Bring the mixture to a boil, then reduce heat to medium-low and simmer for 12-15 minutes, stirring occasionally, until pasta is al dente and most liquid is absorbed.
  7. Stir in heavy cream and Parmesan cheese until well combined and creamy.
  8. Cook for another 2-3 minutes until heated through.
  9. Remove from heat and let sit for 2 minutes to thicken slightly.
  10. Garnish with fresh basil leaves before serving.
