All the flavor of pancakes without the flipping! This delightful casserole is perfect for sharing at your next gathering, baked to golden perfection with maple syrup and fresh blueberries.
Ingredients
1/2 cup (113g) melted butter
2 cups (240g) pancake mix
1 1/3 cups (315ml) milk
2 large eggs
1/2 cup (160g) maple syrup
1 cup (150g) fresh blueberries or (170g) chocolate chips
Instructions
Preheat oven to 350°F (175°C) and pour melted butter into a 9×13 baking dish.
In a bowl, whisk together pancake mix, milk, and eggs until just combined.
Pour the batter over the butter in the baking dish (do not stir).
Drizzle maple syrup evenly over the batter and sprinkle with blueberries or chocolate chips.
Bake for 20-25 minutes until golden brown and set in the center.
Cut into squares and serve warm with extra syrup on the side.
Notes
Serve with extra warm syrup on the side for an added treat.
You can add a dash of cinnamon (1/2 teaspoon) to the batter for extra warmth and spice.
For best texture, do not overmix the pancake batter.
Refrigerate any leftovers in an airtight container for up to 3 days.
