Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • 4 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 (15-ounce) can great northern beans, rinsed and drained
  • 1 (4-ounce) can diced green chilies
  • 1/2 cup sour cream or plain yogurt, for topping
  • Chopped cilantro, for topping
  • Lime wedges, for serving

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic, cumin, oregano, and cayenne pepper (if using) and cook for another minute until fragrant.
  3. Add the shredded chicken, chicken broth, great northern beans, and diced green chilies to the pot. Bring to a simmer.
  4. Reduce heat to low, cover, and let simmer for at least 15 minutes, or up to 30 minutes, to allow the flavors to meld.
  5. Before serving, stir in sour cream or plain yogurt, if desired.
  6. Serve hot, topped with chopped cilantro and a squeeze of lime juice.
