- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper (optional)
- 4 cups cooked chicken, shredded
- 4 cups chicken broth
- 1 (15-ounce) can great northern beans, rinsed and drained
- 1 (4-ounce) can diced green chilies
- 1/2 cup sour cream or plain yogurt, for topping
- Chopped cilantro, for topping
- Lime wedges, for serving
Instructions
- Heat the olive oil in a large pot or Dutch oven over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic, cumin, oregano, and cayenne pepper (if using) and cook for another minute until fragrant.
- Add the shredded chicken, chicken broth, great northern beans, and diced green chilies to the pot. Bring to a simmer.
- Reduce heat to low, cover, and let simmer for at least 15 minutes, or up to 30 minutes, to allow the flavors to meld.
- Before serving, stir in sour cream or plain yogurt, if desired.
- Serve hot, topped with chopped cilantro and a squeeze of lime juice.
