Ingredients

  • 6 English muffins, split and cubed
  • 1/2 cup butter, melted
  • 1/2 cup diced turkey
  • 6 large eggs
  • 2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese

For the Hollandaise Sauce:

  • 6 egg yolks
  • 2 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1 cup butter, melted
  • 2 tablespoons hot water

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Spread the cubed English muffins in the prepared dish.
  3. Sprinkle the diced turkey over the muffins.
  4. In a large bowl, whisk together the eggs, milk, salt, and pepper.
  5. Pour the egg mixture over the muffins and turkey.
  6. Sprinkle the cheddar cheese over the top.
  7. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes, or until golden brown and set.
  8. While the casserole is baking, prepare the hollandaise sauce.
  9. In a blender, combine the egg yolks, lemon juice, salt, and white pepper.
  10. With the blender running on low, slowly drizzle in the melted butter until the sauce is thick and emulsified.
  11. Add the hot water and blend for a few more seconds to thin the sauce to the desired consistency.
  12. Once the casserole is done, let it cool slightly before slicing.
  13. Serve each slice with a generous spoonful of hollandaise sauce.
