- 6 English muffins, split and cubed
- 1/2 cup butter, melted
- 1/2 cup diced turkey
- 6 large eggs
- 2 cups milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese
For the Hollandaise Sauce:
- 6 egg yolks
- 2 tablespoons lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 1 cup butter, melted
- 2 tablespoons hot water
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- Spread the cubed English muffins in the prepared dish.
- Sprinkle the diced turkey over the muffins.
- In a large bowl, whisk together the eggs, milk, salt, and pepper.
- Pour the egg mixture over the muffins and turkey.
- Sprinkle the cheddar cheese over the top.
- Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes, or until golden brown and set.
- While the casserole is baking, prepare the hollandaise sauce.
- In a blender, combine the egg yolks, lemon juice, salt, and white pepper.
- With the blender running on low, slowly drizzle in the melted butter until the sauce is thick and emulsified.
- Add the hot water and blend for a few more seconds to thin the sauce to the desired consistency.
- Once the casserole is done, let it cool slightly before slicing.
- Serve each slice with a generous spoonful of hollandaise sauce.
