- 2 cups (200g) old-fashioned rolled oats
- 3 ripe bananas, mashed (about 1.5 cups or 340g)
- 1/2 cup (120ml) honey or maple syrup
- 1/4 cup (60ml) vegetable oil
- 1 teaspoon (5ml) vanilla extract
- 1/2 teaspoon (2.5g) ground cinnamon
- 1/4 teaspoon (1.25g) salt
- 1/2 cup (75g) chopped walnuts
- 1/4 cup (40g) dried cranberries
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8 inch (20x20cm) baking pan with parchment paper.
- In a large bowl, combine mashed bananas, honey or maple syrup, vegetable oil, and vanilla extract. Mix well.
- Add rolled oats, ground cinnamon, and salt to the wet ingredients. Stir until fully combined.
- Fold in chopped walnuts and dried cranberries.
- Pour the mixture into the prepared baking pan and press down firmly with a spatula to create an even layer.
- Bake for 25-30 minutes, or until the edges are golden brown and the center is set.
- Remove from oven and let cool completely in the pan on a wire rack.
- Once cooled, lift the bars out using the parchment paper and cut into 12 equal bars.
- Store in an airtight container at room temperature for up to 5 days, or refrigerate for longer freshness.
