  • 1/2 teaspoon (2.5ml) vanilla extract
  • 8 slices bread (challah, brioche, or your favorite)
  • 2 tablespoons (30g) butter, for cooking
  • 1/4 cup (30g) chopped pecans
  • 2 tablespoons (30ml) maple syrup
  • Powdered sugar, for dusting (optional)

Instructions

  1. In a large bowl, whisk together the pumpkin puree, milk, eggs, sugar, pumpkin pie spice, and vanilla extract until well combined.
  2. Heat a large skillet or griddle over medium heat. Add butter and let it melt.
  3. Dip each slice of bread into the pumpkin mixture, ensuring both sides are coated. Allow excess mixture to drip off.
  4. Place the soaked bread slices onto the hot skillet and cook for 2-3 minutes per side, or until golden brown and cooked through.
  5. Remove the French toast from the skillet and place on a serving plate.
  6. Top with chopped pecans and drizzle with maple syrup.
  7. Dust with powdered sugar, if desired.
