  • 4 slices challah bread
  • 1/2 cup milk
  • 1/4 cup pumpkin puree
  • 2 large eggs
  • 2 tablespoons maple syrup
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons butter
  • 1/4 cup chopped pecans
  • 2 tablespoons maple syrup (for topping)
  • 1 tablespoon powdered sugar

Instructions

  1. In a shallow dish, whisk together the milk, pumpkin puree, eggs, maple syrup, pumpkin pie spice, and vanilla extract.
  2. Heat a large skillet or griddle over medium heat. Add the butter and let it melt.
  3. Dip each slice of bread into the pumpkin mixture, making sure to coat both sides.
  4. Place the soaked bread onto the hot skillet and cook for 2-3 minutes per side, or until golden brown and cooked through.
  5. While the French toast is cooking, prepare the topping. In a small bowl, combine the chopped pecans and maple syrup.
  6. Once the French toast is cooked, remove it from the skillet and place it on a plate.
