  • 6 slices thick bread (brioche or challah work well)
  • 3 large eggs
  • 1/2 cup (120g) pumpkin puree
  • 1/4 cup (60ml) milk
  • 2 tablespoons (30ml) maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon cinnamon
  • Pinch of salt
  • 2 tablespoons butter for cooking

Instructions

  1. In a medium bowl, whisk together eggs, pumpkin puree, milk, maple syrup, vanilla extract, pumpkin pie spice, cinnamon, and salt until smooth.
  2. Heat a large non-stick skillet or griddle over medium heat and add 1 tablespoon of butter.
  3. Dip each slice of bread into the pumpkin egg mixture, allowing it to soak for about 15–20 seconds per side until well coated.
  4. Place the coated bread slices onto the preheated skillet and cook for 3–4 minutes until golden brown.
  5. Flip the French toast and cook for another 3–4 minutes on the other side until golden brown and cooked through.
  6. Remove from skillet and keep warm. Repeat with remaining bread slices, adding more butter to the skillet as needed.
  7. Serve warm with maple syrup, a dusting of powdered sugar, and optional whipped cream.
