- 6 slices thick bread (brioche or challah work well)
- 3 large eggs
- 1/2 cup (120g) pumpkin puree
- 1/4 cup (60ml) milk
- 2 tablespoons (30ml) maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 1/4 teaspoon cinnamon
- Pinch of salt
- 2 tablespoons butter for cooking
Instructions
- In a medium bowl, whisk together eggs, pumpkin puree, milk, maple syrup, vanilla extract, pumpkin pie spice, cinnamon, and salt until smooth.
- Heat a large non-stick skillet or griddle over medium heat and add 1 tablespoon of butter.
- Dip each slice of bread into the pumpkin egg mixture, allowing it to soak for about 15–20 seconds per side until well coated.
- Place the coated bread slices onto the preheated skillet and cook for 3–4 minutes until golden brown.
- Flip the French toast and cook for another 3–4 minutes on the other side until golden brown and cooked through.
- Remove from skillet and keep warm. Repeat with remaining bread slices, adding more butter to the skillet as needed.
- Serve warm with maple syrup, a dusting of powdered sugar, and optional whipped cream.
