Description
Chewy, rich, and incredibly easy flourless peanut butter cookies made with just 6 simple ingredients. Perfect for a quick, naturally gluten-free treat that satisfies any sweet craving.
Ingredients
Scale
- 1 cup (240g) creamy peanut butter
- 1 cup (200g) granulated sugar
- 1 large egg
- 1 teaspoon (5ml) vanilla extract
- 1/2 teaspoon (2.5g) baking soda
- 1/4 teaspoon (1.25g) salt
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, combine peanut butter, sugar, egg, vanilla extract, baking soda, and salt. Mix until smooth.
- Scoop tablespoon-sized portions of dough and roll into balls. Place on baking sheet, spacing about 2 inches apart.
- Flatten each ball slightly with a fork, making a crisscross pattern.
- Bake for 10-12 minutes, until edges are lightly golden.
- Let cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Pro Tip: Use creamy, processed peanut butter for the most consistent texture. Natural peanut butter may yield a different result.
- For Chewy Cookies: Do not overbake. Remove from oven when edges are lightly golden and centers are just set; they will continue to firm as they cool.
- Variations: Add 1/2 cup chocolate chips or a pinch of cinnamon for a delightful twist.
