  • 1 cup (150g) finely chopped bell peppers (assorted colors)
  • 1 cup (150g) shredded carrots
  • 1 cup (100g) thinly sliced cucumber
  • 1/2 cup (75g) finely chopped red onion
  • 1/2 cup (30g) fresh cilantro, chopped

Instructions

  1. In a medium bowl, combine the softened cream cheese, sour cream, lime juice, salt, and black pepper. Mix until smooth and well-blended.
  2. Lay out the flour tortillas on a clean surface. Spread an even layer of the cream cheese mixture over each tortilla, leaving a small border around the edges.
  3. Evenly distribute the chopped bell peppers, shredded carrots, sliced cucumber, chopped red onion, and fresh cilantro over the cream cheese layer on each tortilla.
  4. Tightly roll up each tortilla from one end to the other, pressing gently to secure the filling.
  5. Wrap each rolled tortilla tightly in plastic wrap and refrigerate for at least 30 minutes to firm up.
  6. Remove from the refrigerator, unwrap, and slice each roll into 1-inch pieces using a sharp knife.
