- 4–6 strips Chicken Bacon, diced
- 1 medium Onion (approx. 150g / 1 cup), finely chopped
- 3–4 cloves Garlic, minced
- 1 tablespoon Stone Ground Mustard (or Dijon mustard)
- 1 teaspoon Smoked Paprika
Instructions
- Cook the bacon. Heat a large pan over medium heat and cook the diced chicken bacon until it’s perfectly crisp, then remove with a slotted spoon and set aside. Remove some bacon grease from the pan, leaving about two tablespoons.
- Cook the onion and garlic. Add the chopped onion to the same pan and cook until translucent, about 5 minutes. Then add the minced garlic and cook for an additional minute until fragrant.
- Sauté the cabbage. Add the thinly sliced cabbage and sauté until tender and slightly brown, about 8-10 minutes, stirring occasionally.
- Add remaining ingredients. Stir in the stone ground mustard and smoked paprika, mixing well to combine. Then crumble the reserved crispy chicken bacon on top. Serve immediately as a delicious side dish.
