Ingredients

  • 12 oz gluten-free rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup black olives, sliced
  • 1/4 cup pepperoncini peppers, sliced
  • 1/2 cup mozzarella cheese, cubed
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • 1/4 tsp salt

Instructions

  1. Cook the gluten-free pasta according to package directions in a large pot of salted boiling water. Drain and rinse with cold water to stop the cooking process.
  2. While pasta is cooking, prepare all vegetables: halve cherry tomatoes, dice cucumber, thinly slice red onion, slice black olives and pepperoncini peppers.
  3. In a small bowl, whisk together all dressing ingredients: mayonnaise, sour cream, olive oil, red wine vinegar, Italian seasoning, garlic powder, onion powder, black pepper, and salt until smooth and well combined.
  4. In a large mixing bowl, combine the cooled pasta with all prepared vegetables and mozzarella cubes.
  5. Pour the creamy Italian dressing over the pasta mixture and toss gently until everything is evenly coated.
  6. Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow flavors to meld together.
  7. Before serving, give the pasta salad a good stir and adjust seasoning if needed. Serve chilled.
