A quick and easy Gluten-Free Creamy Italian Pasta Salad perfect for potlucks, picnics, or a simple weeknight meal.

- 12 oz gluten-free rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1/2 cup black olives, sliced
- 1/4 cup pepperoncini peppers, sliced
- 1/2 cup mozzarella cheese, cubed
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 2 tbsp olive oil
- 2 tbsp red wine vinegar
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp black pepper
- 1/4 tsp salt
Instructions
- Cook the gluten-free pasta according to package directions in a large pot of salted boiling water. Drain and rinse with cold water to stop the cooking process.
- While pasta is cooking, prepare all vegetables: halve cherry tomatoes, dice cucumber, thinly slice red onion, slice black olives and pepperoncini peppers.
- In a small bowl, whisk together all dressing ingredients: mayonnaise, sour cream, olive oil, red wine vinegar, Italian seasoning, garlic powder, onion powder, black pepper, and salt until smooth and well combined.
- In a large mixing bowl, combine the cooled pasta with all prepared vegetables and mozzarella cubes.
- Pour the creamy Italian dressing over the pasta mixture and toss gently until everything is evenly coated.
- Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow flavors to meld together.
- Before serving, give the pasta salad a good stir and adjust seasoning if needed. Serve chilled.
