- 400g / 1¾ cups Chickpeas (canned, drained, and rinsed)
- 250g / 1 pint Cherry Tomatoes, halved
- 1 medium Cucumber, diced
- ½ medium Red Onion, thinly sliced
- 100g / ½ cup Kalamata Olives, pitted and halved
- 1 medium Bell Pepper (any color), diced
- ¼ cup Fresh Parsley, chopped
- 150g / ⅔ cup Prepared Hummus
- 2 tbsp Lemon Juice, freshly squeezed
- 2 tbsp Extra Virgin Olive Oil
- 1–2 tbsp Water (to thin dressing)
- Salt to taste
- Black Pepper to taste
- ½ tsp Dried Oregano
Instructions
- In a large bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, Kalamata olives, bell pepper, and parsley.
- In a small bowl, whisk together the hummus, lemon juice, olive oil, water, salt, pepper, and oregano until smooth.
- Pour the hummus dressing over the salad and toss gently to combine.
- Serve immediately or chill for later.
Notes
- Make Ahead: Prepare the salad ahead of time, but add the dressing just before serving to prevent it from becoming soggy.
- Vegan Option: Ensure that the hummus used is also vegan for a completely plant-based salad.
