A refreshing Greek Chickpea Tomato Salad with creamy hummus dressing. Easy, healthy, and packed with Mediterranean flavors!


Ingredients

  • 400g / 1¾ cups Chickpeas (canned, drained, and rinsed)
  • 250g / 1 pint Cherry Tomatoes, halved
  • 1 medium Cucumber, diced
  • ½ medium Red Onion, thinly sliced
  • 100g / ½ cup Kalamata Olives, pitted and halved
  • 1 medium Bell Pepper (any color), diced
  • ¼ cup Fresh Parsley, chopped
  • 150g / ⅔ cup Prepared Hummus
  • 2 tbsp Lemon Juice, freshly squeezed
  • 2 tbsp Extra Virgin Olive Oil
  • 12 tbsp Water (to thin dressing)
  • Salt to taste
  • Black Pepper to taste
  • ½ tsp Dried Oregano

Instructions

  1. In a large bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, Kalamata olives, bell pepper, and parsley.
  2. In a small bowl, whisk together the hummus, lemon juice, olive oil, water, salt, pepper, and oregano until smooth.
  3. Pour the hummus dressing over the salad and toss gently to combine.
  4. Serve immediately or chill for later.
