Ingredients

- 500g Cooked Chicken Breast, shredded or diced
- 60ml Olive Oil
- 30ml Lemon Juice
- 15ml Red Wine Vinegar
- 5ml Dried Oregano
- 2.5ml Garlic Powder
- Salt & Pepper to taste
- 1 medium Cucumber, diced
- 2 medium Tomatoes, diced
- 1/4 medium Red Onion, thinly sliced
- 1/2 cup Kalamata Olives, pitted and halved
- 115g Feta Cheese, crumbled
- 1/4 cup Fresh Parsley, chopped
Instructions
- Ensure chicken is cooked and shredded/diced.
- Dice cucumber, tomatoes, and slice red onion. Halve olives.
- Whisk together olive oil, lemon juice, red wine vinegar, oregano, garlic powder, salt, and pepper.
- Combine chicken and vegetables in a large bowl.
- Pour dressing over salad and toss gently.
- Crumble feta cheese and sprinkle parsley on top. Toss lightly.
- Serve immediately or chill before serving.
Notes
- Make Ahead: Prepare a few hours in advance, but add feta and parsley just before serving.
- Spice it Up: Add a pinch of red pepper flakes to the dressing for a kick.
