Ingredients

  • 500g Cooked Chicken Breast, shredded or diced
  • 60ml Olive Oil
  • 30ml Lemon Juice
  • 15ml Red Wine Vinegar
  • 5ml Dried Oregano
  • 2.5ml Garlic Powder
  • Salt & Pepper to taste
  • 1 medium Cucumber, diced
  • 2 medium Tomatoes, diced
  • 1/4 medium Red Onion, thinly sliced
  • 1/2 cup Kalamata Olives, pitted and halved
  • 115g Feta Cheese, crumbled
  • 1/4 cup Fresh Parsley, chopped

Instructions

  1. Ensure chicken is cooked and shredded/diced.
  2. Dice cucumber, tomatoes, and slice red onion. Halve olives.
  3. Whisk together olive oil, lemon juice, red wine vinegar, oregano, garlic powder, salt, and pepper.
  4. Combine chicken and vegetables in a large bowl.
  5. Pour dressing over salad and toss gently.
  6. Crumble feta cheese and sprinkle parsley on top. Toss lightly.
  7. Serve immediately or chill before serving.

Notes

  • Make Ahead: Prepare a few hours in advance, but add feta and parsley just before serving.
