- 2 cups (250g) all-purpose flour
- 1 cup (100g) rolled oats
- ¾ cup (150g) granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon (optional)
- 1 cup (240g) plain Greek yogurt
- 2 large eggs
- ½ cup (113g) unsalted butter, melted and cooled
- 1 teaspoon vanilla extract
- 1½ cups (170g) fresh or frozen raspberries
Instructions
- Preheat Oven: Preheat your oven to 200°C / 400°F. Line a 12-cup muffin tin with paper liners or grease with non-stick spray.
- Mix Dry Ingredients: In a large bowl, whisk together flour, oats, sugar, baking powder, baking soda, salt, and cinnamon (if using).
- Mix Wet Ingredients: In a separate bowl, whisk together Greek yogurt, eggs, melted butter (cooled), and vanilla extract until smooth.
- Combine: Pour wet mixture into the dry ingredients and stir gently until just combined. Do not overmix.
- Fold in Raspberries: Gently fold in raspberries. If using frozen, toss them with 1 tbsp flour before adding.
- Fill & Bake: Divide batter evenly among muffin cups. Bake at 200°C / 400°F for 5 minutes, then reduce to 175°C / 350°F and bake another 15–20 minutes.
- Cool: Let muffins cool in the tin for 5 minutes, then transfer to a wire rack. Enjoy warm or at room temp.
