Ingredients

- 4 medium fresh peaches, halved and pitted
- 1 can (15 ounces/425g) cooked chickpeas, drained and rinsed
- 1/4 cup (30g) thinly sliced red onion
- 4 cups (100g) fresh arugula
- 1/2 cup (60g) crumbled feta cheese
- 3 tablespoons (45ml) fresh lime juice
- 2 tablespoons (30ml) honey
- 3 tablespoons (45ml) extra virgin olive oil
- 1 teaspoon (5ml) Dijon mustard
- Salt and pepper to taste
Instructions
- Brush peach halves with olive oil.
- Grill peaches cut-side down for 3–5 minutes until grill marks appear.
- Cool and chop grilled peaches into bite-sized pieces.
- Whisk together lime juice, honey, olive oil, Dijon mustard, salt, and pepper.
- Combine arugula, chickpeas, red onion, and grilled peaches in a bowl.
- Pour dressing over salad and toss gently.
- Sprinkle with feta cheese and serve immediately.
Notes
- Storage: Store in an airtight container in the refrigerator for up to 3 days. Add feta before serving.
- Variations: Add grilled chicken, goat cheese, or toasted nuts for extra flavor.
