  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons fresh chives, chopped
  • 1/2 cup Greek yogurt
  • 1/4 cup buttermilk
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon hot sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons fresh dill, chopped
  • Salt and pepper to taste
  • 1/4 cup crumbled feta cheese

Instructions

  1. Preheat your grill to medium-high heat (about 400°F/200°C).
  2. Prepare the spicy ranch dressing by combining Greek yogurt, buttermilk, mayonnaise, lemon juice, hot sauce, garlic powder, onion powder, paprika, cayenne pepper, and fresh dill in a medium bowl. Whisk until smooth and well combined. Season with salt and pepper to taste. Refrigerate until ready to use.
  3. Brush each iceberg lettuce wedge lightly with olive oil on all cut sides. Season with salt and black pepper.
  4. Place the lettuce wedges directly on the preheated grill. Grill for 2-3 minutes per side, until grill marks appear and the edges are slightly charred but the lettuce remains crisp.
  5. Carefully remove the grilled lettuce wedges from the grill and place each wedge on individual serving plates.
  6. Drizzle the spicy ranch dressing generously over each grilled lettuce wedge.
  7. Top with cherry tomatoes, red onion slices, and fresh chives.
  8. Sprinkle crumbled feta cheese over the top of each salad.
