Description

A tropical twist on a classic favorite, bringing together the warm spices of carrot cake with the juicy sweetness of pineapple.


Ingredients

  • 1 1/2 cups (190g) all-purpose flour
  • 2 teaspoons (10g) baking soda
  • 1 teaspoon (3g) ground cinnamon
  • 1/2 teaspoon (1.5g) ground nutmeg
  • 1/4 teaspoon (0.75g) ground cloves
  • 1/2 teaspoon (3g) salt
  • 1 1/2 cups (300g) granulated sugar
  • 3/4 cup (180ml) vegetable oil
  • 4 large eggs
  • 1 teaspoon (5ml) vanilla extract
  • 2 cups (200g) grated carrots
  • 1 (8 ounce) can crushed pineapple, undrained (227g)
  • 1 cup (100g) chopped walnuts or pecans (optional)
  • 8 ounces (226g) cream cheese, softened
  • 1/2 cup (1 stick) (113g) unsalted butter, softened
  • 3 cups (360g) powdered sugar
  • 1 teaspoon (5ml) vanilla extract
  • 1/4 cup (60ml) milk or pineapple juice (optional)

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In a separate bowl, combine the sugar, oil, eggs, and vanilla extract. Beat until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
  5. Stir in the grated carrots, crushed pineapple, and nuts (if using).
  6. Pour the batter into the prepared pan and bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  8. In a large bowl, beat the cream cheese and butter together until smooth and creamy.
  9. Gradually add the powdered sugar, beating until well combined.
  10. Stir in the vanilla extract.
  11. If the frosting is too thick, add milk or pineapple juice, 1 tablespoon at a time, until desired consistency is reached.
  12. Once the cake is completely cooled, frost it with the cream cheese frosting. Slice and serve.
