Description
A comforting and wholesome soup featuring savory ground beef, tender cabbage, and a medley of garden vegetables simmered in a rich beef broth.
Ingredients
1 lb (450g) lean ground beef
1 onion, chopped
2 carrots, peeled and sliced
2 celery stalks, chopped
1/2 head cabbage, chopped
1 can (14.5 oz / 411g) diced tomatoes
6 cups beef broth
1 tsp dried thyme
1 tsp garlic powder
Salt to taste
Pepper to taste
Instructions
In a large soup pot, brown the beef and onion over medium heat; drain fat.
Add carrots and celery; cook for 5 minutes until slightly softened.
Stir in cabbage, diced tomatoes (undrained), broth, thyme, garlic powder, salt, and pepper.
Bring to a boil, then reduce heat to low.
Simmer for 25-30 minutes until all vegetables are tender.
Taste and adjust seasoning before serving.
Notes
This soup freezes very well for meal prep.
Add a splash of Worcestershire sauce for deeper beef flavor.
