Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup (1 stick) unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 34 tablespoons ice water
  • 4 cups sliced fresh peaches
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 1/2 cup all-purpose flour
  • 1/4 cup packed light brown sugar
  • 1/4 cup rolled oats
  • 1/4 cup (1/2 stick) unsalted butter, cold and cubed

Instructions

  1. Preheat oven to 375°F (190°C). Grease and flour a 9×13 inch baking pan.
  2. Make the Crust: In a large bowl, whisk together the flour, sugar, and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Gradually add the ice water, one tablespoon at a time, mixing until the dough just comes together. Press the dough evenly into the prepared baking pan.
  3. Bake the crust for 15-20 minutes, or until lightly golden. Remove from oven and let cool slightly.
  4. Make the Peach Filling: In a large bowl, combine the sliced peaches, sugar, flour, cinnamon, and lemon juice. Gently toss to coat.
  5. Make the Crumble Topping: In a medium bowl, combine the flour, brown sugar, and rolled oats. Cut in the cold butter until the mixture resembles coarse crumbs.
  6. Assemble and Bake: Pour the peach filling over the pre-baked crust. Sprinkle the crumble topping evenly over the peach filling.
  7. Bake for 30-35 minutes, or until the topping is golden brown and the peach filling is bubbly.
  8. Let cool completely before cutting into bars. Store in the refrigerator.
